Description

Our family run company has produces wine for over three generations.

Our company is in Terrossa di Roncà, a town the Soave area at the start of the Alpone Valley in the North-East of Italy.

Years of experience and the desire of continually improve the quality of our wines helped convince us to introduce our wines onto the international market.

Fattori produces essentially Garganega, Pinot Grigio and Sauvignon Bianco in an area of about 30 hectares.

Our main objective is to produce high quality wines that are fresh and fruity with a balanced acidity and a good body.

Our vineyards have an average age of about 15 years and are all coltivated in "Guyot" and "Cordone Speronato". The vineyards are South-East facing on the foot hills of the Alps. The average altitude of our vines is about 200 meters above sea level. At this height, the difference in temperature between day and night is elevated creating a climate very similar to the famous vineyards of South Tirol and Friuli.

For some time it has been noted the beneficial effects of the strong thermal conditions for the aromatic maturity of white grapes.

Our vineyards are planted in soil of volcanic origin, in part with a presence of red clay (from which the name Terrossa comes) and in part stony.

The clay part helps maintain the humidity even in the summer months when it seldom rains therefore guaranteeing a good activity of the vines in the whole of the growing season.

Our productions never exceeds 8000 Kg of grapes for hectare or 1.5-1.6 Kg of grapes for plant.

The density is of about 5000-5500 vines for hectare.

Our cellar is modern and rational.

All of the vats are in stainless steel 304/316 and equipped with the most effective cleaning systems.

The grapes are destalked with modern machinery at low speeds then gently pressed using pneumatic presses. The must is chilled and decanted using special stainless steel vats.

The fermentation process occurs in temperature controlled stailess steel vats.

The refrigeration available at our farm is extremely generous allowing us to maintain a temperature of 12°C during the fermentation and 14°C after.

We also have large oak casks -20hl- and Bariques that we use for the fermentation of Soave Motto Piane and Recioto di Soave D.O.C.G..
