Ravenna: sweet salt and extremely delicate oil, the taste buds of history
Ravenna cuisine consists of succulent grilled mutton and pork chops, tasty fish "rustite", home-made cappelletti and tagliatelle, tagliolini and fish fries, always-present piadina with dressed-pork products and fresh cheese including pecorino. Among the most excellent products is the "sweet" salt of Cervia, the extra-virgin olive oil of Brisighella, the aromatic herbs from the Garden of Casola Valsenio. The list of wines leaves little to be desidered, starting with Albana Docg and then the controlled denomination of origin wines: Sangiovese, Trebbiano, Cagnina and Pagadebit.
