The care of the vineyard, the vines and the grapes that arise from it are fundamental to the quality of wines.
For this reason the vines of Nebbiolo, Vespolina, Barbera and Erbaluce the only white berried grapes - are cultivated with the most modern and rational growing systems.
"Low yields to work on the quality" is the principle that led to the choice of sixths of plant close and a high density, 5.000 7.000 plants per hectare, with yields, which, through new winter pruning and the summer thinning out, do not exceed the 70 quintals per hectare.
These low yields, the meticulous work in the vineyard, the system of pruning to Guyot - as is the best tradition in Piemonte - and the particular micloclimate of Colline Novaresi contribute to determine the complexity of aromas that is essential to obtain a superior quality wine.
All wines produced from Cascina Zoina can proud of controlled denomination of origin "Colline Novaresi".
The 20.000 bottles produced every year are the result of the great attention paid to every single step of the vinification process.
The small cellar, located in Oleggio, in the north of Piemonte, close to the vineyards, is provided with the most modern equipment and with high technological components: the fermentation takes place in tanks of stainless teel at controlled temperature and, at the racking, the marcs are subjected to an extremely soft pressing thanks to a modern pneumatic press.
In the wine cellar for ageing, maintained at constant temperature and humidity, the wines are aged in stainless-steel tanks or in small oak barrels, where they develop aromas more intense and complex and the body typical of a good aged wine.
These aromas are still more characterized thanks to the process of clarification, which thus prevent the consumer to fully understand all of its character.
All our wines are aged for a minimum period of 18 months - with the exception of white that ages 12 months - to be commercialized.
