Housed in the ancient mill of Palazzo Riccabona, built in the 16th century by the noble Austrian family, the exclusive El Molin Restaurant in Cavalese was opened in 1990 by its chef patron Alessandro Gilmozzi.

Our distinctive characteristics have always been the use of top quality raw materials in season, a constant research for details and particulars, a sapient mixture of flavours and perfumes, naturally growing mountain herbs and flowers such as watecress.
The scents fill our kitchens, with fresh boletus and chanterelle mushrroms, and the colours take on bright tones with the arrival of raspberries and mountain strawberries. That's why Alessandro likes to define his cooking as the gastronomic expression of jazz or blues music.
